KosherEye friend Tish Boyle, cookbook author and editor of Dessert Professional magazine, a trade magazine for the pastry industry. and the former editor of Chocolatie magazine has a delightful website which features scrumptious recipes including this one for homemade marshmallows. Once you have tasted the homemade variety, store bought marshmallows will  be a thing of the past. Tish's marshmallows are soft, airy and melt in your mouth.

Ingredients:

3 envelopes powdered gelatin, (kosher such as Kolatin brand)
1  1/2 cups water, divided
1 cup light corn syrup
2 tablespoons honey
1 2/3 cups granulated sugar
2 teaspoons vanilla paste or extract
1/2  teaspoon salt
1 cup confectioners
